It is the end of the summer season and we are full steam ahead into fall. We are diving head first into the back to school schedules and daily routines. I now have one child in elementary school, one child in middle school and one child in high school. Both my middle schooler and my high schooler are in accelerated school programs and they are with school work and super b-u-s-y with other activities!
When my son gets off the bus in the afternoon, the first thing he says when he walks in the door is "I'm starving". I need to have a snack ready quick for him because we are usually heading out the door to other activities. None of my children drive yet, so I am shuffling all of them and their schedules from one side of the suburbs of Chicago to the other.
To eat well and keep on top of our busy schedules, I have a couple of quick and easy recipes to turn to when I'm in a time crunch. Some afternoons, I have kids walking in the door off the bus and we have to leave in 20 minutes for another activity or commitment. While these quick and easy recipes may not be considered fine dining, my kids get to eat a wholesome, delicious snack in under 20 minutes prep time for me.
Here is one quick, tasty snack that leaves me and my kids more time for what really matters. Like having a conversation about what homework they need assistance with, what assignments are due the next day and most importantly, how their day went and how they are in general. My days just seem to be a little easier to tackle when I don't have to think too hard about what I am serving for an easy after school snack.
Now you may be thinking that cheese fondue takes to long to make or it is too difficult. But, all it takes is a little grating, measuring, mixing and baking your apps for a tasty snack with wholesome ingredients that is satisfying, delicious and is done in less than 20-minutes!
Quick and Easy Cheese Fondue
Directions: Bake the Farm Rich Mozzarella Sticks, Farm Rich Jalapeno Peppers & Farm Rich Buffalo Style Boneless Chicken Bites according to the package instructions. (The Buffalo Style Boneless Chicken Bites take a bit longer to bake than the Mozzarella Sticks and the Jalapeno Peppers. Simply begin with the Boneless Chicken Bites, then add the Mozzarella Sticks, the Jalapeno Peppers and continue baking according to the package details.)
Rub the bottom of a medium pot with the sliced garlic and toss. Place over medium heat and add the chicken stock.
In a bowl, toss together the three shredded cheeses and the cornstarch. Reduce the heat to medium-low and add the cheeses one handful at a time. Stir continuously with a wooden spoon until the cheeses are melted and smooth.
Stir in the lemon juice, the whipping cream and season with salt and nutmeg.
Pour the cheese mixture into a fondue pot and serve immediately. Use fondue forks for your teenagers to spear the appetizers and dip them into the fondue. Serve with your favorite Farm Rich fondue appetizers and go-to snacks.

The smooth texture and creaminess of the Gouda and Gruyère cheeses make this fondue super easy to make. The flavors of Swiss, Gouda and Gruyère are all similar, sweet and nutty, so they blend well together when melted with the chicken stock and whipping cream. You need the taste of lemon juice to add a bit of zest. I always add a dash of salt and nutmeg as well. When I have a gaggle of teenage boys in my home, they all want loads of cayenne pepper added!
