LEPRECHAUN BAIT SNACK MIX

This delicious Leprechaun Bait Snack Mix is packed with SkinnyPop Popcorn, Bugles Corn Snack, Mini Pretzels Sticks, Chex Rice Cereal, Green Marshmallows, Green Chocolate-Covered Candies, and everything is coated in melted green candy chocolate melts.
Do you adore making holiday-themed snacks for your kiddos and family? I’ve been doing it for years, so when I don’t or I forget, my kids are all like - ‘Hey Mom, what happened to the St Patick’’s Day snack that you always make?
I have a couple of staple recipes that I have on rotating status for each holiday and St Patrick’s Day always calls for a Leprechaun Bait Snack Mix filled will loads of salty snacks with a touch of sweetness added in for good measure!
LEPRECHAUN BAIT SNACK MIX
INGREDIENTS
1 cups Rice Chex or similar crispy cereal
1 cup miniature pretzel sticks
1 cup SkinnyPop Popcorn
1 cup Bugles Corn Snack
1/2 cup green marshmallows (we picked out of Minecraft cereal)
3/4 cup green candy-coated chocolate
1 cup green melting chocolate buttons (or you can use white chocolate chips)**
1 tsp coconut oil
How To Make Leprechaun Bait Snack Mix
Cover a large tray or sheet pan with parchment paper.
Line up the ingredients on the sheet pan, side by side.
Melt the green chocolate buttons in the microwave for 30 seconds and then melt for another 30 seconds. Stir gently until fully melted. Add the coconut oil for a smoother consistency.
With a spoon, drizzle the melted green chocolate over the popcorn, pretzels, corn, and rice snacks, and cover with as much chocolate as you like.
Let cool for 15 minutes.
Pour into a bowl.
Add green chocolate-covered candy pieces.
** A Few Tips About Melting the Chocolate
Use higher-quality chocolate for the best results: I really like the melting buttons the best. They work so much better than chocolate chips in my opinion.
To AVOID burning the melting buttons in the microwave. Melt them in 30-second increments ONLY. I place the melting buttons in a shallow bowl, heat for 30 seconds, take the bowl out, and give it a gentle shake. Then I pop back in for a second 30 seconds. I stir with a toothpick and continue to stir until it is almost completely melted. Don’t be tempted to put it back in the microwave, the chocolate will keep melting while you stir it! Trust me!!
Once it is melted, then add the coconut oil (or vegetable oil will work) Then will allow the chocolate to not harden as quickly and you won’t have to work so fast. If you see your chocolate beginning to harden, just stir it a bit more.
I took the Bugles Corn Snack and dipped the ends in the green melted chocolate and then dipped them in St Patrick’s Day-themed sprinkles. I dipped about 18-20 Bugles and let them cool and added these to our LEPRECHAUN BAIT SNACK MIX as well.
In addition, I had already made some St Patrick’s Day Chocolate Covered Pretzels since my youngest daughter absolutely loves holiday-themed pretzel bites. So I add a handful of these St Patrick’s Day Chocolate Covered Pretzels to our Leprechaun Bait Snack Mix too! It is full of salty and sweet is the perfect combination!
