I am a big supporter of the arts! I happen to think it is so important to support the arts in my community as well. The arts enrich and inspire our families and especially, my children. We are so fortunate to live in an area where I can literally turn in a circle and point to a city where we could see some form of an arts performance. Luckily, we have a fabulous arts center in our own village.
My girls play in two orchestra groups at our local arts center and during the summer months, we love to go to the free, outdoor summer concerts. Every Saturday evening, our local arts center hosts a free outdoor concert where we can rediscover the arts and friendships that get lost in the shuffle during our busy school year.
Friends from our community come and gather and bring chairs, blankets, food, and beverages to the free concerts. These summer concerts are a great place to catch up on all our families lives. I was so excited to bring some amazing street tacos to share with our group this past weekend.

I wanted to celebrate rediscovering my love of these street tacos from last summer with a bit of help from LA MORENA® and these Grilled Chicken Chipotle Street Tacos with Chipotle Avocado Crema! I adore the weekends and I seriously am in love with these chicken street tacos!
Really, every day is about the simple moments in life that make me happy. My children, my friends, great summer concerts, our amazing community and really, really good food. Like every happy day that occurs in our daily lives, it eventually must come to an end. But, not without dinner first . . . and street tacos!
Grilled Chipotle Chicken Street Tacos
* 1 package chicken breasts*
* 1 cup Crema (or sour cream or plain yogurt)
* 1 7 oz can LA MORENA® Chipotle Peppers in Adobo
*I know some people don't care for chicken breast and tend to use the thigh instead. However, my family loves the chicken breast meat. I shop at my local Jewel-Osco grocery and they happen to have the biggest, hand trimmed boneless skinless chicken breasts in my area! Plus, they also have awesome produce and you can pick up all your favorite LA MORENA® products! But, really, just go with your personal taste in regards to the chicken.
Instructions
In a medium bowl, combine the crema and the LA MORENA® Chipotle Peppers in Adobo. Stir together until smooth. Place the chicken breasts into the bowl and coat with the marinade. Cover and stick in the fridge for at least 4 hours. Overnight is better though!
Preheat a grill over medium heat. Remove chicken from marinade, but keep the marinade in the bowl at the grill station. Slowly grill the chicken until cooked through (thickest center should register from 165). Grilling the chicken slowly ensures the chipotle adobo sauce will make a glistening coating on the chicken. Each time the chicken is turned, slather in the adobo marinade. Transfer the grilled chicken to a plate, cover with foil and let rest 5 minutes.
Boil corn on the cob as usual and then place on the grill for about 5-6 minutes to char a bit. Slice the corn off the cob.
Slice grilled chicken. Lay out your tacos (two tortillas if using corn), then place sliced chicken, avocado slices, cabbage, LA MORENA® Whole or Sliced Jalapeños and a dollop of Chipotle Avocado Crema. Serve warm, spritzing each taco with lime juice and you could also drizzle a bit of the LA MORENA® Chipotle Sauce over the top!
Chipotle Avocado Crema
½ cup crema (or sour cream or plain yogurt)
2-4 Tbsp of 7 oz can of LA MORENA® Chipotle Sauce (or MORE - really, to your taste)
½ cup finely chopped cilantro
juice from one lime
salt to taste
In a food processor, combine the yogurt, chipotle peppers, adobo sauce, cilantro and lime juice. Blitz until smooth.
For Serving
Mini corn or flour tortillas
1 large sliced avocado
sliced radishes
grilled corn on the cob
½ small red cabbage, chopped
¼ cup chopped cilantro
Lime wedges
Chipotle Avocado Crema
7 oz can LA MORENA® Whole Jalapeños
28 oz can LA MORENA® Sliced Jalapeños
