I know you are thinking, jicama, you put jicama in a smoothie? Yep, I did! If you don't know anything about jicama, it is sort of like a potato, a bit more crunchy and bit more sweet, but without all the carbohydrates. Plus, jicama is the perfect vegetable to toss into your Vitamix for your smoothies because it is low in calories but high in fiber, vitamin C, magnesium and good for your gut bacteria. Jicama also supports bone health, which is so important for women as they get older.
I have this slight addiction to chocolate peanut butter cups, it's to the point where I have actually banned all chocolate peanut butter cups from my home. So, I came up with this healthy Chocolate Jicama Peanut Butter Smoothie to satisfy my love of this sweet treat. I actually will drink one of these for breakfast and have enough for lunch as well. This is great for me because I have this terrible habit of never eating breakfast OR lunch. I developed this bad habit in high school and it has stuck with me throughout my life.
I went to a nutritionist a few years ago and she suggested I drink smoothies to take the place of all the coffee, teas and sodas I was drinking throughout the day in place of eating actual food. This has been the best advise for me and I truly love coming up with unique and tasty smoothies. But, I have to say this Chocolate Jicama Peanut Butter Smoothie is my absolute favorite.

Chocolate Jicama Peanut Butter Smoothie
INSTRUCTIONS
Blend the chopped jicama and almond milk until smooth. I would suggest to place the Vitamix speed dial on high and pulse. If you don't like a thick smoothie, simply lower the variable speed dial on your Vitamix and pulse for a shorter duration. this might take a few rounds unless you don't mind a thicker mixture.
To the jicama mixture, add remaining the frozen bananas, peanut butter, almond milk, vanilla extract, spinach and the protein powder of your choice. I also add some ice cups to make my smoothie thicker and cold.
Pour into a cup and top with a chopped up chocolate or chocolate peanut butter cup.
Ingredients
2 medium frozen banana
2 tablespoons peanut butter
handful of fresh spinach leaves
1/2 teaspoon vanilla extract
2 cups almond milk
2-3 tbsp of protein powder (I use chocolate peanut butter)
4 large ice cubes
Now, I have a little trick for you to use to save you loads of time for future smoothie making in the morning when you may be pressed for time getting all the children off to school or heading to a work-out session. This above recipe is a double recipe if you didn't already figure that out. I take a portion for my breakfast, save a portion for my lunch and freeze it. I also take an ice cube tray and pour the remaining smoothie mixture into the ice cube tray and freeze smoothie ice cubes. This saves me so much time during the week whist making smoothie as my ice cubes are already flavored with my favorite Chocolate Jicama Peanut Butter Smoothie!
Okay, now, I have played around with this particular smoothie recipe for quite awhile now. I eliminate the bananas, I leave them in, I eliminate the spinach or change it up with kale. I have used blackberries or blueberries. I have not used the jicama, because I don't always have one in my home. But, after all the trials, I have decided, for me, this is the best tasting and the best consistency because I happen to like really thick smoothies. However, if you like a less thick smoothie, by all means, use your own trial sessions with your Vitamix. Creating new smoothie recipes is super simple with the Vitzmix because it literally takes less than 10 minutes to prepare pretty much anything with a Vitamix blender!
The amazing aspect of the Vitamix high performance blender is that I can create simple smoothie recipes that even my children can make and enjoy. I already know they are going to make me my favorite Chocolate Jicama Peanut Butter Smoothie for breakfast and use my Chocolate Jicama Peanut Butter Smoothie flavored ice cubes. Even my husband can utilize the Vitamix and he is super challenged in the kitchen! ☺
