Peanut Butter Chocolate Chip Cookies with Homemade Chocolate Chocolate Chip Ice Cream
Family Movie Night is one of our favorite ways to spend time together as a family that is inexpensive and fun. Check out how easy it is to host a family movie night and have a great night at home.
Last week we had a couple of fabulous sunny days and then toward the end of the week, we were blasted with more storms. There has been so much rain this summer and it really puts a damper on our day time activities. My grass has ever been this green in July and I'm loving that aspect of the rain! We haven't been able to get in as much time at the pool as my kiddos would like because of the rain. While it is fun to swim in the rain; at the first spot of lightening, the pool is closed! Sadly, we've spent more time indoors this summer than normal.
I wanted to make a bit of fun for the kids as the sun disappeared on Friday. I had planned a Family Movie Night for Friday evening, but my late afternoon, the skies and clouds had opened up and were pouring down massive buckets of rain. We had Family Movie Night early on Friday! Before dinner (I wasn't able to grill dinner as the rain was coming down so hard I couldn't even see out the window), we had Family Movie Night. My children thought I was the best mom in the world giving movie and dessert before dinner! It turned out to be a great idea actually!

We watched Boss Baby, which comes out on DVD TODAY! We made homemade Peanut Butter Chocolate Chip Cookies earlier in the day. We had also made some Chocolate Ice Cream with Mini Chocolate Chips earlier. The kids thought I was just going to give them cookies with ice cream, but I surprised them.
I took the cookies and spread some Chia Peanut Butter all over them. I then took a huge scoop of the Chocolate Chocolate Chip Ice Cream and put it on a Chia Peanut Butter covered Peanut Butter Chocolate Chip Cookie. THEN I took another Peanut Butter Chocolate Chip Cookie and made a very large cookie and ice cream sandwich.
I can't even begin to tell you how good the cookies and the chia peanut butter together are! My mouth was in heaven. My kids looked at me like I was crazy thinking they were going to eat the chia peanut butter, but I finally coaxed them that it was the best thing they would ever eat. They all relented and were in peanut butter and chocolate heaven with me.
I would even say that Boss Baby would totally have to agree with me on this cookie. This cookie is most definitely for closers!
Peanut Butter Chocolate Chip Cookies with Homemade Chocolate Chocolate Chip Ice Cream
You can use any of your favorite Chocolate Chip Cookie Recipes and simply add the desire amount of peanut butter that your like in your cookies. Here is what we used to make ours:
Ingredients:
1½ cups flour (use the type you would bake with)
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon real salt
½ cup (1 stick) unsalted butter, room temperature
½ cup raw organic sugar
½ cup raw organic packed light brown sugar
1 large egg
1 cup crunchy peanut butter
1pure vanilla extract
1½ cups semi-sweet chocolate chips (we use the chunky type)
Directions:
Preheat oven to 350°F. Whisk the flour, baking powder, baking soda, and salt together in a medium bowl. Set aside.
Cream the butter and sugars together. Add the egg and mix until combined. Add the peanut butter and vanilla, and mix until combined.
Add the dry ingredients to the wet ingredients until combined. Add the chocolate chips. (Try to keep the kids from eating all the cookie dough!!)
Line large baking sheets with parchment paper or baking mats.
Scoop out the size of cookies you would like to bake - large or small. Bake each set of cookies for 10-15 minutes until lightly browned on the sides(depends on the size you decide to scoop onto the baking sheets). The centers should still look soft.
Remove from the oven and rest for at least 5 minutes. Transfer to a counter of rack to cool completely.
Chocolate Chocolate Chip No Churn Ice Cream
Ingredients
No Churn Ice Cream Base
4 cups heavy whipping cream-VERY COLD
2 cans sweetened condensed milk
1 tablespoon pure vanilla extract
ADD-INS for Chocolate Chocolate Chip
½ cup baking cocoa (unsweetened)
¾ cup mini chocolate chips
When preparing to make no churn ice cream, the first thing I do is grab the quart of heavy whipping cream and pop it into the freezer. I get all my containers and tools and ingredients out and the last thing I do is take the heavy whipping cream out of the freezer. The colder the heavy whipping cream, the better peaks you will get when whipped. (You could also put your bowl into a larger bowl filled with ice to whip to keep cold during the process) Add the 4 cups heavy cream and whip to stiff peaks. Mix with a hand mixer (use the whisk attachment) or stand mixer. Add the baking cocoa to the sweetened condensed milk and mix. Fold this mixture gently into your whipped cream and the vanilla to the bowl. When half mixed through, add ½ cup of the chocolate chips and continue to fold until combined. It should look like a very thick milk shake at this point. Spoon the ice cream mixture into a freezer safe container. Add the remaining mini chocolate chips on top. Cover with plastic wrap and freeze overnight.
This No Churn Ice Cream is really so easy to make. The base is what we use for all our ice cream and then we add whatever we like depending on the day or week. I thought this would be the best ice cream for our Family Movie Night to watch Boss Baby. #BossBabyMovieNight
