This is a sweet snack that my husband can not ever resist! Right now, he is trying to lose weight, so he was not to happy with me when he saw this sitting on the counter waiting to be devoured. This Pistachio, Pumpkin & Cranberry White Chocolate Bark is really a great gift to give to friends, families and teachers as well this holiday season!

I will admit and state that at pretty much every month or celebration, I make some sort of almond bark treat. Almond bark is so versatile and so simple to add to any tasty treat. Don't be afraid to use almond bark, because it goes great with salty snacks and sweet treats.  Literally, just melt the almond bark, add some topping (your imagination is your only limit), refrigerate it and cut it up and eat away!

I recall the first time I was introduced to almond bark. I was babysitting for one of my favorite families in jr high and the momma asked me to make almond bark covered pretzel treat with her daughters. I was instantly addicted and have been making these tasty treats ever since. You really can't go wrong with using almond bark ad dried fruits and nuts!

Here is my husband's favorite recipe:

Pistachio, Pumpkin & Cranberry White Chocolate Bark

Ingredients

  • 1 package white almond bark

  • ½ cup shelled pistachios

  • ½ cup pumpkin seeds(Lightly Salted Dry Roasted Shelled Pepitas)

  • ½ cup dried cranberries

Instructions

  1. Line a sheet pan with parchment paper

  2. Melt the almond bark in its tray (I always purchase the package that has the microwaveable tray)

  3. Once the almond bark is melted, tap it lightly against your counter top to ensure all is melted evenly.

  4. Pour out onto your lined sheet pan

  5. Haphazardly toss the pistachios, pumpkin seeds and dried cranberries.

  6. Take a toothpick and swirl the seeds, nuts and dried fruit around onto the almond bark

  7. Refrigerate for at least 30 minutes until set.

  8. Using a sharp knife, cut the bark into pieces or simply break with your hand
