Chocolate Chip Caramel Frappe

I have a love affair with coffee. I must have it! I must have it all day long! We recently returned from a vacation in Europe and I have to be honest, I really missed my coffee here in the states. I found coffee, but nothing like my favorite coffee that I can brew using a K-cup in my Keurig. Next trip, I seriously need to figure out how to pack my Keurig!

I adore coffee so much that I will move my schedule around just so I can drink my favorite coffee throughout the day. I love to have an afternoon coffee. In fact, it delights me! If I am out and about with the children running them to their functions and activities, I will splurge and go through a local drive-thru and pick myself a delicious coffee to go. However, when I am home, I simply brew up a large cup of my favorite coffee and enjoy the deliciousness there.

Now that we are in the brink of spring, I love nothing more than to switch from a steaming cup of hot coffee to a cup of cold coffee or better yet, a frappe. If you have not tasted the deliciousness of a frappe, I have the best recipe for you.

Simply brew your best single serve coffee in your Keurig and freeze it. I add a flavored cream to the single cup coffee and then pour the mixture in an ice cube tray and freeze ahead of time. Once you have your frozen coffee ice cubes you will be ready to make a homemade frappe.

My favorite 'flavor' for a frappe is chocolate chip caramel. This can be made with or without ice cream. It depends on my mood whether or not I will add the ice cream. Today, I wanted the ice cream!

Empty the tray of coffee ice cubes into a blender, add a couple of scoops of any flavor of ice cream you like (I chose vanilla), a squirt of chocolate sauce, a squirt of caramel sauce, a handful of chocolate chips, and 1/4 to 1/2 of milk (I used rice milk because that is what we drink in this house, but you can use any milk you like . . . whole, skim, evaporated). Blend until smooth. Pour into your favorite cup, top with whipped cream and drizzle some chocolate sauce, caramel sauce and chocolate chips.

Chocolate Chip Caramel Frappe

Ingredients

  • 2 scoops vanilla ice cream (optional)

  • 1/2 milk (I prefer Rice milk)

  • 1/2 caramel coffee creamer

  • 1 cup of your favorite brewed coffee{frozen in an ice cube tray}

  • handful of chocolate chips

  • a squirt of chocolate sauce

  • a squirt of caramel sauce

Instructions

  1. Brew your favorite K-Cup Single Serve coffee in your Keurig

  2. Mix the brewed Single Serve Coffee with your caramel coffee creamer.

  3. Pour the mixture in an ice cube tray and place in your freezer.

  4. Place your frozen ice cubes in a blender and add the ice cream (optional), milk, chocolate chips, chocolate sauce, caramel sauce.

  5. Blend well.

  6. Pour into your favorite glass.

  7. Top with whipped cream.

  8. Drizzle chocolate and caramel sauce over the whipped cream and toss on a couple chocolate chips.

  9. Enjoy immediately!
