Pasta alla Carbonara with Pancetta

Ingredients
1 pound rigatoni (or your favorite pasta)
2TBSP Extra Virgin Olive Oil
¼ pound of pancetta, diced (or sliced pancetta)
3 eggs, at room temperature
1 cup freshly grated pecorino Romano cheese
Salt and pepper to taste
Instructions
Cook pasta as directed by the package.
Heat the Extra Virgin Olive Oil over medium heat in a large sauté pan. Add the pancetta and cook until golden brown and crispy. Remove from pan and set aside.
In a mixing bowl, whisk together the eggs, cheese, and freshly ground pepper. Set aside.
Drain pasta and transfer to a large sauté pan previously heated over medium heat.
Add the pancetta to the pan and toss until well mixed.
Remove the pan from the heat and add the egg and cheese mixture. Toss thoroughly until everything is well coated with the sauce.
Serve warm.

TIPS FOR MAKING CARBONARA PASTA
If you don’t have rigatoni, you can substitute for penne as I did. If you don’t have a chunk of pancetta, you can substitute for sliced pancetta as I did. Feel free to experiment with the recipe and add anything else you like. I grated some fresh garlic and sauteed it with the 100% Italian Extra Virgin Olive Oil after I sauteed the pancetta. I also added a tiny bit of fresh thyme. Do ensure your eggs are room temperature, this is very important for the recipe. Thoroughly mix your eggs and parmesan cheese prior to adding to the hot pasta.
